I recently had the pleasure of filming my father-in-law, Riaz Missaghian, a truly fantastic chef, while he prepared a delicious lunch for us during our holiday in Spain. He made a healthier version of the traditional German schnitzel, using chicken breast instead of pork. This dish was seasoned with anti-inflammatory spices like turmeric and black pepper. It was super tasty and filling! We also enjoyed air-fried sweet potatoes and courgette on the side—another recipe for another day!

  • 2 chicken breasts

  • 1 cup whole wheat breadcrumbs

  • 1 teaspoon turmeric

  • 1 teaspoon black pepper

  • 1 egg (beaten)

  • Olive oil spray


Instructions:

  1. Preheat your air fryer to 200°C (390°F).

  2. In a bowl, mix the breadcrumbs, turmeric, and black pepper.

  3. Dip each chicken breast in the beaten egg, then coat with the breadcrumb mixture.

  4. Spray the air fryer basket with olive oil and place the chicken inside.

  5. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.


Enjoy your healthier schnitzel with a side of air-fried sweet potatoes and courgette!
